Apple Rhubarb Crisp

Adapted from:  Animal Vegetable Miracle

Note:  This infinitely adaptable recipe was originally intended for a strawberry rhubarb crisp, but it's also fabulous with apples and fresh rhubarb!  It's especially wonderful served warm with some vanilla ice cream!

3 cups apples, peeled and chopped
3 cups rhubarb, chopped
1/2 cup honey
1/4 cup all-purpose flour
1/4 cup whole wheat flour
1/2 cup rolled oats
1/2 cup brown sugar
3/4 teaspoon cinnamon
1/3 cup cold butter

Preheat the oven to 350 degrees F.

Thoroughly mix together the apples, rhubarb and honey; place in an 8" x 8" ungreased pan.

Mix remaining ingredients together until crumbly; sprinkle over fruit mixture and bake until golden, about 40 to 50 minutes.
