1 lb. new baby potatoes, chopped
1 cup baby carrots, chopped
1 cup squash, chopped
1 clove garlic, chopped
1 tbsp curry paste 1/2 tsp salt
1/2 cup coconut milk
Cook potatoes and carrots until tender.
Saute garlic, squash, and curry paste until fragrant. Add salt, potatoes, carrots, and coconut milk.
Place 4 sheets of filo, greased lightly with coconut oil, in pie pan. Fill with curry mixture, and top with another 2 sheets of filo.
Bake at 375 degrees for 30 minutes.
